Healthy Sourdough Sandwich

Ingredients

2 slices of sourdough bread
1 teaspoon olive oil
1 tablespoon tomato paste
A handful of fresh arugula
2 slices of cheese (mozzarella or any melting cheese)
4–5 slices of turkey (turkey Volys)

Method

Instructions:
Lightly brush the inside of each sourdough slice with olive oil.
Spread the tomato paste on one slice of bread.
Add the arugula on top of the tomato paste.
Place the cheese slices over the arugula.
Add the turkey Volys slices on top of the cheese.
Close the sandwich with the second slice of bread (olive oil side facing out)
Bake in a preheated oven at 180°C (350°F) for 8–10 minutes or until the cheese melts and the bread becomes crispy.
